Barefoot Kitchen Caribbean Spiced Rum BBQ Meatballs (Baked/Stove Top Method)

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1/2 Cup breadcrumbs (or almond flour for gluten-free)
  • 2 eggs, lightly beaten
  • 1/4 Cup onion, finely minced
  • 2 cloves garlic minced
  • 1 Tsp salt
  • 1/2 Tsp black pepper
  • 1 1/2 Cups Barefoot Kitchen Spiced Rum BBQ Sauce
  • 1/2 Cup pineapple chunks for serving (Optional)

Cooking Directions

  • Preheat oven to 400 Degrees F
  • Line baking sheet with parchment
  • Mix beef, pork, breadcrumbs, eggs, onion, garlic, salt and pepper until just combined (Don't over mix the meat, light handling keeps meatballs tender)
  • Form meatballs (1-1 1/2") and place on the baking sheet
  • Bake 18-20 minutes, until browned and cooked through
  • Warm Barefoot Kitchen Caribbean Sauce in large skillet over medium-low heat
  • Add meatballs and toss and coat
  • Simmer 5 minutes, allowing sauce to thicken and cling
  • Serve with pineapple chunks (optional)
