My Desire to Be More Healthy

Hi, I’m Dave; developer and food connoisseur. Barefoot Kitchen was developed as a way to increase your food experience to what it was so many years ago. Real food made from real food ingredients instead of foods made with no real nutritional value.

I’m a fairly healthy person. I was, I thought, until I hit my 40th birthday. I grew up eating breakfast cereals, full of artificial flavors and colors. Fast foods made with seed oils. I drank soda pop from an early age and never really thought much about it. But when I hit my 40th birthday, wow! My body started to fight back. I found out I was type 2 diabetic. I had high blood pressure, high cholesterol, and on and on, so my doctor started a regiment of medicines that I would be locked to for life.

I finally decided to fight back. After many years in the food manufacturing industry developing some of the most popular foods and appetizers in our country, I realized these and many other foods were not meeting our daily needs for real nutrition. They may taste good and be fun to eat, but deep frying my original stuffed jalapeno’s in seed oils, or dipping them into refined sugar rich dipping sauces, just was missing the mark.
So in 2024, I decided to take my award winning line of sauces, all made with traditional ingredients, and go back to the drawing board.

I replaced refined sugar with honey, maple & molasses. I replaced soy sauce with coconut aminos. I removed the harmful seed oils and replaced them with olive oil, avocado oil or other healthier choices. I basically went back to the drawing board with every recipe I had. In order to do that, I had to develop my own ketchup, Worcestershire sauce, sweet Chile sauce and other crucial ingredients to remove all those components that we know now are fueling obesity and chronic diseases because healthy options are not available.

The sauces you see here are all originals developed over the past 40 years. I wanted to make them healthier without removing the great flavors so many have come to enjoy. The Legend of Barefoot Billy

According to Dave ( The SauceSquach ), who runs Barefoot Kitchen, it happened on a black stormy night. The sky was lit by a firestorm of lightning when the tornado hit, followed by a downpour that was threatening to wash his small cafe away. He was huddled inside waiting for the storm to pass when a stranger crawled in through the back door seeking safety.

In the blackness of night he couldn’t see him well but was struck by his overwhelming size and unique scent. Seeing the faint outline of the stranger he froze, they huddled in darkness for hours neither one saying a word.

Exhausted, Dave eventually fell into a deep sleep. When he awoke, the stranger was gone, the back door left open. Dave slowly got up to see if the stranger was still there. Extremely hungry since the storm had lasted so long, he noticed a wonderful scent coming from his grill out back. He walked out to check and found that the stranger had left him a wonderful spread of baby back ribs, a flask of Hickory Smoked Barbecue, and a set of barefoot prints leading back into the wilderness.

Time goes on and Legend has it that Dave meets up with him from time to time all over the back country.  And some believe it’s probably where Dave comes up with some of his amazing new flavors he shares at Barefoot Kitchen. Dave calls him Barefoot Billy, and you won’t believe some of the other stories he’s shared.
