Ingredients

  • 4-5 Boneless Skinless Chicken Thighs
  • 1 Bottle of Barefoot Kitchen Maple Chipotle Barbecue Sauce
  • 2 Large Sweet Potatoes
  • Small bag of Baby Carrots
  • 1 Large Yellow Onion
  • 1 Red Bell Pepper
  • 4 Small Corn on the Cob
  • Olive Oil Spray
  • All Purpose Seasoning

Cooking Directions

  1. Preheat Oven to 350 degrees F
  2. Spray Large glass oven safe dish with Olive Oil
  3. Place cleaned 4-5 Chicken Thighs in dish
  4. Peel 2-3 Sweet Potatoes, cut in quarters and place around chicken
  5. Place as many Baby Carrots around chicken as you like
  6. Clean and cut Onion and Bell Pepper into Slices and place around chicken
  7. Place corn on the cob in dish
  8. Baste a generous amount of Barefoot Kitchen Maple Chipotle Barbecue Sauce over ingredients
  1. Sprinkle All Purpose Seasoning to taste on top of all ingredients
  2. Tightly cover dish with aluminum foil and place in oven for 1 hour 30 minutes
  3. Remove Dish from oven and remove aluminum foil being careful because it will be hot and steamy
  4. Baste more Barefoot Kitchen Maple Chipotle Barbecue Sauce over ingredients
  5. Place dish back in oven uncovered and bake until Sauce caramelizes, approximately 15-20 minutes
  6. Remove and Serve
