Ingredients

  • 12 whole jalapenos, either fresh or canned
  • 1 Bottle of Raspberry Jalapeno Southwest Glaze
  • 8 oz ground beef
  • ½ Cup shredded cheddar cheese
  • 1 Cup whole milk
  • 1 Egg
  • 2 Cups all-purpose flour
  • 2 Cups crushed cracker crumbs
  • 2 Cups Olive oil
  • 2 Tbl of your favorite taco seasoning

Cooking Directions

  • Cut jalapenos in half (using gloves) and remove veins and seeds
  • Cook, drain and season ground beef with taco seasoning to taste
  • Once ground beef cools mix in shredded cheese
  • Press this mixture into spoon size balls 
  • Place balls into cavity of jalapenos
  • Place jalapenos on sheet pan and freeze completely
  • Using 3 bowls, mix egg and milk in one, flour in second bowl and crushed crackers in third bowl
  • Dip frozen stuffed peppers in egg mixture, then into flour, then back into egg mixture and then into cracker crumbs 
  • Place jalapenos back into freezer and refreeze
  • Heat oil to 350-degrees and fry jalapenos 3-4 Mins
  • Drain on paper towel
  • Serve with Barefoot Kitchen Raspberry Southwest Glaze for dipping
