Cooking Directions
- Cut jalapenos in half (using gloves) and remove veins and seeds
- Cook, drain and season ground beef with taco seasoning to taste
- Once ground beef cools mix in shredded cheese
- Press this mixture into spoon size ballsÂ
- Place balls into cavity of jalapenos
- Place jalapenos on sheet pan and freeze completely
- Using 3 bowls, mix egg and milk in one, flour in second bowl and crushed crackers in third bowl
- Dip frozen stuffed peppers in egg mixture, then into flour, then back into egg mixture and then into cracker crumbsÂ
- Place jalapenos back into freezer and refreeze
- Heat oil to 350-degrees and fry jalapenos 3-4 Mins
- Drain on paper towel
- Serve with Barefoot Kitchen Raspberry Southwest Glaze for dipping
