Barefoot Kitchen Tequila Lime Chicken Street Tacos (Grilled and Stove Top Method)

Ingredients

For Chicken:

  • 1 1/2 lbs boneless, skinless chicken thighs (or breast if you prefer)
  • 1/2 cup Barefoot Kitchen Tequila Lime Fajita Marinade
  • 1 tbsp olive oil
  • 1 tsp smoked paprika (optional for extra depth)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Tacos:

  • 12 small corn to tortillas (warm and slightly charred)
  • 1/2 small red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, diced or mashed
  • 1 cup shredded cabbage or lettuce
  • Lime wedges (for serving)
  • Chopped tomato (optional)
  • Queso fresco or cotija cheese, crumbled (optional)
  • Pickled jalapenos or radishes (optional)
  • Black beans (optional)

Optional creamy topping (for extra flair)

  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp Barefoot Kitchen Tequila Lime Fajita Marinade
  • 1 tsp honey or agave
  • Mix until smooth and drizzle over tacos

Cooking Directions

  • Marinate chicken: In a bowl or zip-top bag, combine chicken, Barefoot Kitchen Tequila Lime Fajita Marinade, olive oil, smoked paprika, salt and pepper
  • Marinate for at least 30 minutes (2-4 hours for max flavor)
  • Grill or pan-sear chicken over medium-high heat for about 5-6 minutes per side, unti fully cooked and slightly charred on the edges
  • Let rest for 5 minutes, then slice thinly or chop into bite-size pieces
  • Heat corn tortillas directly over a gas flame or in a dry skillet until they get a little char and become flexible

Assemble Tacos:

  • Layer shredded cabbage, then chicken, then diced avocado, onion, and cilantro
  • Drizzle with the creamy tequila lime sauce or add a sprinkle of cheese
  • Finish with a squeeze of fresh lime juice
